I'm not big on the whole "spaghetti squash masquerading as pasta" thing. It just isn't pasta. It has neither the consistency or flavor of pasta. So I've never known what to do with it when it shows up in my csa share.

Someone forwarded a link to a recipe for Mock Coconut Pie, which uses spaghetti squash. At first I was a little weird out about trying it, but once I thought about it I realized that pumpkin pie, zucchini squash muffins, etc. etc., are all super tasty sweets using squash. So I gave it a go.

It doesn't have any coconut in it at all. It tastes more like a chess pie. I think the whole "coconut" thing in the title is more about the consistency. It's reaally good. The directions say the cinnamon, nutmeg and whipped cream are optional, but I disagree.

You're right, its not pasta. Initially, I wasn't a big fan of it either. Once I topped it with italian sausage and homemade marinara sauce and baked it in the oven and it was quite tasty. A few days later, when I had it for leftovers it was 10 times better. I want to try it as a base for a stir fry dish, instead of rice. Oh, and I almost forgot, in a pinch I used it to make peanut butter noodles with ginger and broccoli. It was good that way too. Sometimes I can't get over the shock of the crunchiness of the squash. I look at it, and I see noodles and then, they're crunchy. Its always a surprise to me for some reason. Of course, I'm really not a picky eater. If I don't like something at first, I'm on a mission to find a way to like it especially if it comes from CSA. I also like the challenge of finding ways my family will like it too! Enjoy!

I like this recipe, which I read in a magazine last year.  If I get tired of it like that, I thought I'd use it in things I might otherwise use shredded cabbage in, like slaw or eggrolls.
